Because of the malting process, white wheat imparts a sweet malty flavor that is not obtainable from raw wheat. In wheat beers, it can be used for all or part of the base. If mashing, it needs to be used with rice hulls to improve lautering and to help prevent a stuck mash. White wheat can be used at 5% of the total grain bill for head retention in any style of beer. In wheat beers, the usage can be up to 50% of the grain bill.
